Not as easy as it sounds, boiled eggs need some practice to get them right. Besides, everyone has their own preferences.

Preparation:

Do you get complaints about your boiled eggs at the breakfast table?

 

Here is a simple recipe from The Book of Sandwiches, by Gwen Robyns.

 

Use a small saucepan in which you have enough cold water to cover the eggs and add a teaspoon of salt.

 

Bring the water to boiling point. Turn down the heat and simmer very gently:

3-4 minutes for soft boiled eggs

5-6 minutes for medium boiled eggs

8-10 minutes for hard boiled eggs

Notes:

Never fast boil eggs as this only toughens the whites and makes them harder to digest.
