A simple fried rice recipe that is quick and easy to prepare.

Preparation:

If you are using dried mushrooms, soak them in hot water for 30 minutes, then squeeze out the liquid. Finely slice the spring onions, green and all.

 

Heat a deep frying pan or wok, add the oil and fry the ginger and garlic until golden. Add mushrooms and fry for a minute, then add the rice and stir until heated through. Add the onions and soy sauce and stir to combine thoroughly. Taste and add salt if required.

Notes:

I cook the rice the day before or some hours ahead and allow to cool completely (in the fridge). This gives the rice a firm texture and it will not stick together.
